Summary:
In this master's thesis, the yeast's growth of the genus Saccharomyces Cerevisiae on different synthetic substrates was studied in order to analyze and optimize the lists of conditions for the survival of these fungi.
Μore precisely, the specialized wine yeast was inoculated on substrates of different sugar content and its stability during the alcoholic fermentation was examined during the three successive phases of the yeast's growth cycle by recording the dry weight of its cells. The evaluation of the experimental results confirmed the maximum stability during the second stage of life but also the inhibitory effect of the increased amount of action of glucose on its survival.
This work can be a fertile ground for further research for the optimal growing conditions of the Saccharomyces Cerevisiae in different environmental conditions and on different substrates in order to make the best use of it and maximize its productivity in order to achieve the optimal result during the alcoholic fermentation.
