Summary:
In this study, twelve Greek honeys were studied. Along with the various
compounds found in the extracts of the samples, much attention was given to
potential chemical indicators, because for Greek honeys there have been only
few studies concerning their chemical indicators, as opposed to honeys from
other countries (New Zealand, Australia, etc).
The introduction of this study focuses on a literature review of the
Bio-pharmacology of honey. Main natural products that have been yet identified
and isolated from honey, are also reported.
In the 3nd chapter, the extraction and isolation procedures are described, and
the results of gas chromatography analysis are reported. For each isolated
compound, a detailed explanation of the spectroscopic data is presented,
leading to the determination of the chemical structure. Furthermore, some
physicochemical properties of the samples were also determined.
In the 4th chapter are reported the determination of the total phenolic content
of the extracts according to the of Folin-Ciocalteau method, the antimicrobial
activity of the extracts and some isolated compounds, and the pollen analysis
of the samples.
