Summary:
This dissertation consists of two parts. In the theoretical part a
techno-economical study of beer production in three Greek microbreweries is
presented. The factors monitored are energy consumption (thermal, cooling),
water consumption and cost of basic materials (raw materials, cleaning agents
etc.) From the evaluation of the data collected cost saving opportunities were
discovered and suggestions where made based on production optimization. In the
second part samples of raw materials, wort and beer from the three
microbreweries were analyzed. The results were compared between them by keeping
in mind the type of the production equipment in each microbrewery.
