Summary:
In the current dissertation, a study to identify the volatile compounds in
commercially available whiskey samples is conducted. Subsequently, we studied
the extent of their diversification with regard to whisky standards, years of
aging, but also the type of grain used in the production process.
In all whiskey samples, prior to performing the determination of the volatile
components, we determine the alcohol content using digital densitometer. For
the separation and identification of volatile components the method of gas
chromatography (GC) was used. As a detector we used a flame ionization detector
(FID).
A general conclusion that can be drawn, based on the results of the present
study is the fact that in some whiskey samples there was good correlation with
the standards while others showed great variation. Regarding years of whiskey
aging, an increase in total volatile components concentration was observed.
Specifically, largest increase occurred mainly in the concentration of amyl
alcohols, n-propanol and isobutanol. Finally, there was an important
discrimination between the whiskey produced from barley and those produced from
grain mixture, because of the large percentage of amyl alcohols, which appeared
in barley whiskey.
