Summary:
In the present work, we determined the concentration of phenolic compounds and
we evaluated the antioxidant activity of arils, juice and seeds from the fruits
of a classical pomegranate variety using spectrophotometric assays. In
parallel, two extraction methods, a classical and an ultrasound-assisted one
were compared in respect to their efficiency in the extraction of phenolic
compounds. Next, extracts of phenolic compounds from the juices of two new
Greek cultivars of pomegranates and a classical one were studied in terms of to
their phenolic content and antioxidant capacity. A similar comparative study
was conducted in a pomegranate wine and a red wine. In addition, a GC-MS
methodology was developed for the determination of the phenolic content of the
pomegranate extracts and wines after different types of hydrolysis and
conversion of phenolic compounds into their silanized derivatives. Finally, an
HPLC-PDA-ESI-MSn analysis was conducted for the identification of the phenolic
compounds in the extracts of pomegranate juices and wines, as well as special
libraries were constructed based on bibliographical data for the detection of
phenolic compounds.
