Summary:
The aim of this work was the investigation of students’ knowledge regarding
lipids, and the development of a relative educational material for teaching
lipids in secondary education level.
First, a review of the international and Greek literature was conducted, from
which a considerable lack of relative to lipids studies was concluded.
Secondary, a study of the high school Chemistry, Biochemistry, Biology and
Domestic Economy textbooks was carried out, in order to detect the chapters
relative to lipids and their content. We ascertained that the related chapters
are of limited content and usually aren’t taught.
After that, a questionnaire consisting of 23 questions was developed and, after
its evaluation by chemistry teachers, submitted to high school students of 3rd
grade. Their answers revealed that the high school students luck basic
knowledge about lipids and can’t correlate them with everyday life. The results
of our research were used in the development of an educational material,
consisting of various 11 activities containing laboratory experiments,
bibliographical researches and field researches. Each activity includes teacher’
s booklet with analytical instructions, and student’s booklet that contains the
theoretical part, description of each activity, worksheet, and evaluation
sheet.
For the actualization of the activities the guided exploration method was
followed. By these activities the connection between school knowledge and
everyday life is achieved, and the collaboration and participation of all
students is promoted. They are appropriate for secondary educational level,
mainly in 2nd grade of high school.
