Summary:
This project aims to determine thiobarbituric acid index (TBI) and the concentration of total polyphenols (TP) in the same bottled beer samples to find if there is a correlation between them. The thiobarbituric acid index (TBI) method is applicable to both beer and wort. It is a colorimetric assay based on the absorbance of reaction products of thiobarbituric acid with lipid peroxidation products in an acidic medium. Finally in the same project were determined the density, the color, polyphenols concentration and the thiobarbituric acid index in samples during production in order to study how these quantities are affected over time and with increasing temperature.
