Summary:
In this paper tried first overall approach to the issue of wine-presses, about the technology and the evolution of those constructions and also general overview of viticulture and wine production in ancient times. Is recording and classification of published wine-press of Greece, from indirect or direct publications. They were studied 114 cases of wine-presses mainly in terms of construction, materials, production methods in relation to materials. Also it was investigate the position of wine-presses and if those constructions are belonging to larger rural complexes. On the basis of the above mentioned total study was made the identification of the room 8 of Rafina as an industrial room of wine production.
The purpose of this paper is to study the wine production facilities of antiquity, in Greece, mainly through the archaeological remains of the wine-production facilities, and secondarily by the archaeological findings of the vineyards and by iconography of the wine production in the art. The chronological borders of this study started in classical period and ends in late antiquity, with the main purpose of studying the technology and materials of wine-presses at the ancient world.
This paper is structure in four parts. In the first part, which following the introduction, there are some general data about wine and wine viticulture in ancient times, from archeological finds, ancient texts and make clear terminology issues. The second part is about wine-presses. In the first chapter are presented archeological evidences per geographic area, from the oldest recorded archeological find. This chapter also includes archeological finds from wine-making facilities. In the second chapter of second part, are being studied wine-presses in iconography of classical and late antiquity.
The third part is dedicated to Rafina's wine-press (room 8). It is being examined the wine-press in the general excavation context of so-called ''Roman Balneum'', the study of the measuring data and the documentation of use of this room. Measurements of dimensions are in the archeological field were done through orthophotos and through design computer program Autocad Autodesk. In the last chapter of third part is studied the issue of changing of use of buildings in late antiquity and in particular buildings which changing and used as agriculture laboratories. In the fourth-last part of this paper there is the overall conclusion.
