Development and pilot application of educational material on wine and software for the management of sensory analysis of wine
Summary:
The present project was developed within the postgraduate program "Chemistry Teaching and New Educational Technologies" and it’s divided into three (3) parts.
The first part presents the website created for the propose of information about wine. In particular, it contains a few historical data on wine, a description of the entire wine making process, starting from the vine plant and reaching bottling; the wine chemistry, which includes its composition, oenological products and oenological laboratory; reference is made to the organoleptic examination of food and, in particular, to the organoleptic test of wine and its particular organoleptic characteristics; finally, a reference is made to the contribution of wine to human health with data from the antiquity to the present day. The website address, where the reader can see the material, is www.chem.auth.gr.
The second part concerns an educational program for the Laboratory of Chemistry and Food Technology, which refers to students from 3rd grade, enti-tled "I learn about wine and experiment with it". The program includes three (3) educational scenarios with a total of three (3) Power Point presentations ac-companied by their proposed narrative part and two (2) worksheets accompa-nied by an analysis of their activities. In any case, the aims and objectives of the educational process are given.
The third part presents the software created for the Sensory Analysis La-boratory of the Chemistry Department of the Aristotle University of Thessaloniki with the aim of a) automating the collection of data from sensory analysis of wine samples and b) organizing and managing of such data.
