Summary:
This thesis examines the influence of the volcanic of the soil of the island of Santorini to the white wines PDO Santorini. At the beginning wine was made from the indigenous grape variety assyrtico, separated according to its geographical origin from the different parts of the island. Afterwards, by using the analytical method of inductively coupled plasma mass spectrometry, ICP-MS, quantitative analysis of thirty cations of metals took place. As a result, differences were found between the results of the samples which were coordinated to the differences of the geology of the soil of the different areas. Moreover, the results of the analysis were examined to see if they were following the human health safety limits set by the international authorities about the content of wines in these metals.
