          <dc:description xml:lang="el">Στην παρούσα μεταπτυχιακή διπλωματική εργασία μελετάται η εφαρμογή της  φασματοσκοπίας υπερύθρου με μετασχηματισμό Fourier (FT-IR) για την  πολυπαραμετρική ανάλυση δειγμάτων μούστου και οίνου υπό ζύμωση, με στόχο την  περιγραφική και συγκριτική αξιολόγηση της χημικής τους κατάστασης σε πραγματικές  συνθήκες οινοποιείου. Τα δείγματα συλλέχθηκαν κατά τη διάρκεια της οινοποιητικής  περιόδου από οινοποιητικές εγκαταστάσεις και αναλύθηκαν μονοχρονικά με FT-IR  εξοπλισμό που ενσωματώνει προγνωστικά χημειομετρικά μοντέλα.  Μέσω της ταυτόχρονης εκτίμησης βασικών φυσικοχημικών παραμέτρων, όπως τα  σάκχαρα, η αιθανόλη, τα οργανικά οξέα (μηλικό και γαλακτικό), το pH, η ολική και πτητική  οξύτητα και η πυκνότητα, επιχειρείται η πολυπαραμετρική αποτύπωση της εξέλιξης της  αλκοολικής και, ενδεικτικά, της μηλογαλακτικής ζύμωσης. Τα αποτελέσματα  παρουσιάζονται και ερμηνεύονται σε συνδυασμό, ενώ πραγματοποιείται συγκριτική  αξιολόγηση με αντίστοιχα βιβλιογραφικά δεδομένα, προκειμένου να διερευνηθεί ο βαθμός  συμφωνίας και η ερμηνευτική τους επάρκεια.  Η εργασία δεν αποσκοπεί στην ανάπτυξη ή επικύρωση νέων χημειομετρικών μοντέλων,  αλλά στην αξιολόγηση της χρησιμότητας των προγνωστικών τιμών που παρέχονται από  εμπορικά συστήματα FT-IR ως εργαλείο ταχείας και λειτουργικής υποστήριξης της  οινοποιητικής πρακτικής. Τα ευρήματα αναδεικνύουν τη δυνατότητα της FT-IR  φασματοσκοπίας να προσφέρει μια ολιστική εικόνα της χημικής κατάστασης του οίνου  υπό ζύμωση, υπό την προϋπόθεση της ορθής ερμηνείας των αποτελεσμάτων και της  συμπληρωματικής χρήσης μεθόδων αναφοράς όπου απαιτείται.</dc:description>
          <dc:description xml:lang="en">The present master’s thesis investigates the application of Fourier Transform Infrared  (FT-IR) spectroscopy for the multiparametric analysis of must and wine samples during  fermentation, aiming at the descriptive and comparative assessment of their chemical  status under real winery conditions. The samples were collected during the winemaking  period from winery facilities and were analysed at a single time point using FT-IR  instrumentation incorporating predictive chemometric models.  Through the simultaneous estimation of key physicochemical parameters, including  sugars, ethanol, organic acids (malic and lactic), pH, total and volatile acidity, and density,  a multiparametric representation of the progression of alcoholic fermentation and,  indicatively, malolactic fermentation is attempted. The results are presented and  interpreted in an integrated manner, while a comparative evaluation with relevant  literature data is performed in order to assess the level of agreement and the interpretative  adequacy of the predicted values.  This study does not aim at the development or validation of new chemometric models,  but rather at evaluating the practical usefulness of the predictive outputs provided by  commercial FT-IR systems as a rapid and functional tool supporting winemaking practice.  The findings highlight the potential of FT-IR spectroscopy to provide a holistic overview  of the chemical status of fermenting wine, provided that the results are properly  interpreted and, where necessary, complemented by reference analytical methods.</dc:description>
