Summary:
In the present thesis, polyphenolic compounds and their antioxidant activity is examined. The categories of polyphenols and their biological activities are analyzed, and the polyphenolic acid, 3,4-dihydroxyphenylacetic acid is analytically presented. With regards to the antioxidant activity, the mechanisms that take place during the reactions are mentioned and there is a brief reference to the different determination methods. The DPPH assay is extensively discussed, as well as its application to studies of polyphenolic compounds. In the last part of the thesis, the synthesis of new derivatives of polyphenolic 3,4-dihydroxyphenylacetic acid and their identification by nuclear magnetic resonance (1H and 13C NMR) and mass spectrometry (MS) are described. Finally, the antioxidant study using the DPPH assay is outlined for the compounds that were synthesized.
