Summary:
This thesis focuses on Benchmarking and specifically on its application in the food industry. In the first Chapter, is presented the Greek food industry, with its general and specific characteristics. Also, it is necessary to mention the conditions that prevail in this sector nowadays, highlighting the competition that exists. Quite important is to analyze the various obstacles and challenges that the food industry faces in its operation and development. In Chapter 2, a reference about Benchmarking is made. More specifically, the general meaning of this method is given, as its defined by many authors
who have studied this method. Benchmarking is a method that consists of several tools, two of which are considered as the main and most common in use. These are Key Performance Indicators (KPIs) and Data Envelopment Analysis (DEA), with their advantages and disadvantages. The last Chapter is following, in which is indicated how these tools, which are mentioned previously, are applied. At this
point, specific cases of food industries are mentioned. At the end of this thesis and after completing the review of this topic, we have as a result an important conclusion about this method.
